Teff Flour Pancake Recipe
Mix 100 g of Teff flour, 50 g of potato starch *, a teaspoon of baking powder * and salt to taste. Separately mix 1 egg, 200 ml of milk, and 2 tablespoons of honey. Now add the dry ingredients to the liquid ones. Pour a ladle of the mixture into a pan with a little butter. When the first bubbles begin to form on the edge, flip, and cook the other side. Serve the pancakes while still warm, accompanying them with jam *, honey, or whatever you like best.
Teff Flat Bread Recipe
In a bowl, mix 1 glass of Teff flour with salt to taste and add 1 glass of still water at room temperature. Cover with a cloth and leave to rest for at least 10 hours. Take the fermented flour and mix the dough making it homogeneous. Heat a non-stick plate and pour over a couple of tablespoons of dough. Cook on one side only until the surface dries and cracks appear. The underlying part at this point will have developed an alveolation and therefore it will be enough to turn it upside down on a plate and use it as you prefer. It can be served with vegetable caponata.
* For people intolerant to gluten, it is recommended to choose the ingredient among the products suitable for the celiac's diet.
